Do it yourself mini sliders
Pin ItMy sliders aka mini burger were inspired by this past summer's food truck visit. It was a food truck galore all around. I cannot recall the truck name but I enjoyed the mini burgers more than I thought I would. I even made my own sauce, simply 2 sauces combined. No brainer on that. These mini bites are fun for lunch with friends over or dinner. Easy to put together and anything goes! No wrong way to make them. Here's my simple recipe.
Ingredients:
Mini burger buns
Beef
Bacon* optional
Salt & pepper
Yellow onion
Green & red bell pepper
Mozzarella cheese
Sauce (Sriracha hot red sauce & mayo mix)
Chop and shred up your bacon and beef into threaded pieces. Do the same to your bell peppers & onion. Mozzarella can be in round or square slices. Sauteed meat til desired taste. Throw in bell peppers and onion. I like little onion therefore only threw in a little but maximize your preferences! Add your pinch of salt and pepper. Heat up the buns in oven for 5 to 8 minutes, depending on how crisp and hard you like them. Lay them opened. Place sliced mozzarella pieces between buns and let sit til almost melted. Take it out and throw your cooked sauteed meat and veggies in your buns and you are about done. You can either brush on your sauce unto the inside of buns or dip them instead which is how I usually like it.

Salmon & shrimp bacon wrap

Bacon strips
Salmon
Baby shrimps
Toothpicks
olive oil
Teriyaki or your fave flavoring sauce
Great holiday appetizer and something easy to put together before the gather begins. Just simply wrap bacon around shrimp and pre-cut salmon pieces. Stick toothpick to keep it together and from falling apart. *Brush lightly of olive oil on the salmon before wrapping. Once you are done with a handful, stick in on a tray in the oven for 325 degrees for 30 minutes or less. Check to see when done. Once done, brush on Teriyaki sauce or any other sauce of your favorite. No need add salt as the bacon is salty enough already.
Enjoy!
*Optional. For a fancier appetizer party, pre-cut small pieces of pineapples and stick them on after wraps are done and lay out in nice platter bowl. Im sure your party will immensely enjoy this savoring sweet flavor.

Holiday gravy: home made turkey gravy

Ingredients:
Turkey juice (from cooked Turkey)
corn starch - 1 cup (flour replacement ok if none)
butter (1/2 of 4 oz butter stick)
salt
I got about 5 cups worth of juice leftover from the turkey tray. Cover your turkey will with a plastic cover while cooking and you should have plenty of juice to use.
Throw in your butter on high into your cooking pot. Stir well and as it melts, throw in your turkey juice. Let stay on high to about boil then throw in cornstarch by slowly spreading and whisking it in, instead of dumping whole cup in. The trick is to keep whisking on high and then to medium if boiling too quick until all lumps are gone. Add 1-2 tsp of salt along the way. Test taste to make sure it is how much salt you'd like. This may take about 15-20 minutes however if your batch is smaller, should be quicker. If you'd like it a little thicker, add more starch.
And we are done.

Holiday pumpkin spice dip

Ingredients:
8 oz - 1 can of pumpkin puree
3/4 of an 8 oz whip cream bucket
1 cup brown sugar
1 tsp pumpkin spice (add again later for garnish)
1/2 tsp cinnamon
6 granny green apples
graham crackers
6 oz - 1 white yogurt (I used apple cinnamon greek yogurt for more flavoring)
1/4 cup of orange juice for some tartness (*optional)
Blend in all spice, sugar and pumpkin puree in one bowl. Mix well. Then add yogurt and juice. Mix again. Finally, pour in whip cream and whip gently into whole. Chill for an hour before serving.
Cut up apples in small slices and spread along to serve with graham crackers in serving dish. I used graham cracker sticks, a lot funner to eat and dip.
This dish is light and less heavy than your average dip. I found different but similar online recipes on this so
I decided to make it for the holiday and added a little twist to mine. I cannot recall sites now on sharing this dish but thank you.

Family movie night:: baked potato wedges

I don't remember to cook my potatoes much but one family movie night when we were looking for something to substitute plain old popcorn, I remembered some dry potatoes that were just sitting in a bag. So quickly I ordered everyone their part in making this and had them cut up in all sorted slices; garnished with salt, pepper, chives and cheese. Potato wedges, fries, bits, etc, however you prefer to call them, sounded good about then. I also had extra cheddar cheese laying around the fridge and needed to use them up before it went bad. Was so glad I did not throw out the last of it yet. Threw the potato slices in the oven and 40 minutes later we had some tummy filling late night snack.
These babies make easy snacks for informal gatherings and when you just need to do something with the long sitting over due potatoes in the cupboard, this be it.

Grill honey glazed meat balls

To celebrate my first post of this exciting site, Ive decided with something easy making. A friend made this simple but delicious outdoor kebab snack over the summer. And I thought it be a great way to share although summer's about over, you can still make it as a party appetizer. You may use any kind of meat ball from fishballs, pork balls to beefballs,etc but in this one we used the fish balls. Now don't let that make your stomach turn. They are just meat grinded into a ball. Like meatball from beef in your spaghetti. Yes, it may sound odd but they do sell them at your local International store for under $3 or $4 dollars a bag. They are precooked so you do not have to grill them long over heat You have the option of throwing it in the oven if you plan to do it indoors. Our fish ball is primarily made from white fish like Cod.

List of things you will need & yes, thats it:
1) Kebab sticks
2) honey
3) Meat balls
Stick your meatballs on the kebab stick (about 4 or 5 on each) and throw it on the grill or oven for about 5-7 minutes. Oven can be at 350 degrees. And then with a brush, glaze the kebab with honey while turning it to even all sides. Then let it sit until it becomes lightly golden brown. Turn the sticks as it does this so all sides are even at caramelizing. This should only taking a few more minutes. And thats it!
Its a fun and quick snack if you do not have time to do much for a gathering. You can do this with all meat, again as I've said. You may throw some cut up cube veggies or fruit as garnish if you'd like as well. Be creative. Its almost the holidays! Hope yall enjoy!
